Chewy, Gooey Caramel Pumpkin Blondies

These treats are perfect for a Fall evening!  Loaded with Pumpkin and gooey caramels, these Blondies are insanely delicious and addictive.  Plus, they are super easy to make! 2 1/2 cups all-purpose unbleached flour 2 teaspoons cinnamon 1 heaping teaspoon Pumpkin Pie spice 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup butter, melted 1 cup dark brown sugar 1/2 cup granulated sugar 1 egg, lightly beaten 1 teaspoon pure vanilla extract 1 can (15 oz.) Pumpkin puree 1 bag (11 oz.) caramels, unwrapped 1/2 cup evaporated milk Preheat your oven to 350 degrees.  Line a 9x13 inch baking pan with parchment paper.   In a bowl, combine melted butter, egg, and vanilla.  Mix until smooth.  Add sugars and beat well.  Stir in Pumpkin puree and mix well.  Add in flour, cinnamon, Pumpkin Pie spice, baking soda, and salt.  Mix until just combined and smooth. Cookies & Cream Blondies

1 cup unsalted butter, softened 1 cup brown sugar 1/2 cup granulated sugar 2 eggs 1 teaspoon pure vanilla extract 3.4 oz. Instant Vanilla Pudding mix 2 cups unbleached, all-purpose flour 1 teaspoon baking soda 1/2 teaspoon baking powder 1 teaspoon salt 1 cup semi-sweet chocolate chips 16 Oreo cookies, broken into pieces In a large bowl cream together butter, brown sugar and sugar. Beat in the eggs and vanilla; beat until light and fluffy.  Mix in the vanilla pudding mix and beat well.    Mix in the flour, baking soda, baking powder, and salt until well blended. Stir the chocolate chips and Oreo pieces.  Yummy! Grease a 9 x 13 inch pan with butter. Pat batter into the pan with buttered fingers.  Bake at 350 degrees for 20 - 22 minutes. Super Easy S'mores Cookies

  Who can resist the delicious flavor combination of S'mores?  Nobody I know!  Especially during the summer, S'mores are a yummy treat for everyone.  This super easy cookie recipe combines the awesome flavors of a camp fire S'more in a compact little cookie!  Enjoy! 1 1/4 cups Graham Cracker crumbs 1 cup all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 cup unsalted butter, at room temperature 1/2 cup brown sugar 1/2 cup granulated sugar 1 large egg 1 teaspoon pure vanilla extract 1/2 bag of miniature marshmallows, give or take a few 1/2 bag of semi-sweet chocolate chips or milk chocolate chips, give or take a few Preheat your oven to 350 degrees F.  In a large bowl, combine the graham cracker crumbs, the flour, baking soda, and salt.  Set aside. Garlicky Yogurt Chicken & Roasted Veggies

This delicious chicken recipe is very easy to prepare and the best part is that it is healthy and light!  Marinate the night before and the next day you are ready to go!  This recipe is perfect for two, but you can easily double it to feed four people. 2 chicken breasts 6 garlic cloves, minced 1/2 T. chopped fresh parsley 1/2 T. chopped fresh basil 1 t. salt 1 t. freshly ground black pepper 1 cup Panko bread crumbs 6 oz. plain, nonfat Greek yogurt 1 large red onion, cut into wedges 1 large red bell pepper, cut into strips 4 slices lemon The night before: Pound chicken breasts slightly until they are the same thickness, not too thin.  In a medium bowl, mix the yogurt, garlic, fresh herbs, salt and pepper.  Taste and adjust seasoning accordingly.  Pierce chicken breasts with a fork in several places and combine with the yogurt mixture.  Mix the chicken breasts in the yogurt mixture thoroughly to coat well.  Cover and refrigerate. No-Knead Pretzel Bread

This chewy, delicious bread is seriously to-die-for!  I never knew I had it in me to make pretzel bread, but I surprised myself this time.  You don't have to knead the dough, which makes it even better!  Next time, I will shape the dough into pretzel shapes and make my very own, homemade pretzels!  If you want to make the pretzels, simply roll each of the 12 portions into ropes & then twist into pretzel shapes before boiling.  Enjoy! 1 1/2 cups warm water 2 packets active dry yeast 1 T. sugar 4 1/2 cups cups all-purpose unbleached flour 2 t. salt, plus 2 t. coarse sea salt for sprinkling 1/4 cup melted butter 1 egg, separated 1/4 cup baking soda 8 cups water In a medium bowl, sprinkle yeast and sugar into the 1 1/2 cup warm water.  Don't mix it, just let it sit for ten minutes until it begins foaming.  Meanwhile, in a large bowl, whisk the flour and salt.  Add the melted butter, egg yolk and foaming yeast mixture.  Mix with your hands until the dough ca
