These treats are perfect for a Fall evening! Loaded with Pumpkin and gooey caramels, these Blondies are insanely delicious and addictive. Plus, they are super easy to make!
2 1/2 cups all-purpose unbleached flour
2 teaspoons cinnamon
1 heaping teaspoon Pumpkin Pie spice
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup butter, melted
1 cup dark brown sugar
1/2 cup granulated sugar
1 egg, lightly beaten
1 teaspoon pure vanilla extract
1 can (15 oz.) Pumpkin puree
1 bag (11 oz.) caramels, unwrapped
1/2 cup evaporated milk
Preheat your oven to 350 degrees. Line a 9x13 inch baking pan with parchment paper.
In a bowl, combine melted butter, egg, and vanilla. Mix until smooth. Add sugars and beat well. Stir in Pumpkin puree and mix well. Add in flour, cinnamon, Pumpkin Pie spice, baking soda, and salt. Mix until just combined and smooth.
Pour about 2/3 of the mixture into the prepared pan. The mixture will be pretty thick; use a spatula to spread mixture to edges. Bake in preheated oven for about 10 minutes.
Meanwhile, combine the caramels and evaporated milk in a saucepan and cook over medium heat until the caramels are melted. Stir often.
Once the Blondies have baked for 10 minutes, remove from oven and pour caramel sauce over all. Drop remaining dough by spoonfuls all over the top of the caramel sauce. Sprinkle additional Pumpkin Pie spice over it all, if desired. Return the pan to the oven and bake an additional 30 minutes or until a toothpick inserted near the center comes out clean.
Cool completely and cut in squares. Yield: about 12 Blondies.
